This is my mum’s recipe fo pumpkin soup, which seems quite easy.
I rang her up to get it after coming home from a camping trip with a pumpkin. Long story.
I am about to try it with a big jack o’ lantern-type of pumpkin, although my mum reccomends using buttnerut pumpkins because they have more flavour.
This is how you do it. Sautee chopped onions in olive oil, then add chopped pumpkin, grated nutmeg, and some chicken stock. Boil away until the pumpkin is cooked, and then put it in a blender until it is smooth. Easy.
For some variation, you can include potatoes as well as the pumpkin. At the blending stage you can also add a bit of milk or cream if that takes your fancy.
Update: In the end, it took about 1/2 an hour and tasted quite nice:
